Lots of bubbles is one sign that your starter is ready to bake with, but it’s not foolproof! My favorite tell is looking at the top of the starter. If it’s domed, it’s still rising. If it’s flat, it’s peaked. And if it’s falling and there are dragging lines of starter on the sides, it’s deflating. Honestly, filming some time lapse videos of my starter rising, peaking, and falling has helped me better understand what my starter looks like when it’s peaked. I highly recommend doing that…
