Inspired by succotash and topped off with crispy bacon, meet the ultimate tomato salad

Ingredients

Meat

• 6 slices Applewood-smoked bacon

• 1 Ham hock, smoked

Produce

• 30 pieces Baby okra

• 6 Beefsteak tomatoes, cored and cut into 1/4-inch slices, large

• 6 tbsp Chiffonade of fresh basil

• 1 3/8 cup Chives, fresh

• 3 ears Corn, yellow

• 1 cup Field peas, fresh

• 1 Garlic clove, small

• 2 Golden delight tomatoes, cored and cut into 1/4-inch slices, large

• 1/2 cup Green onions

• 1 Onion, large

• 2 Rainbow tomatoes, cored and cut into 1/4-inch slices, large

• 1/2 pint Sweet 100 cherry tomatoes

• 1 Thyme, fresh sprig

Refrigerated

• 1 Egg yolk, large

Condiments

• 15/16 cup Balsamic vinaigrette

• 1 cup Balsamic vinegar

• 3/4 cup Chive dressing

• 2 tbsp Lemon juice, fresh

Baking & Spices

• 1/4 cup All-purpose flour

• 1 tsp Black pepper, freshly ground
