After months of testing, this nourishing, soft-centered bread is finally here. You can skip the tapioca starch, but the result will be slightly denser and less fluffy. I recommend keeping it in for a softer, lighter texture. ⸻ Dry Ingredients: • Jowar (Sorghum) flour – 280 g (approx. 2 cups) • Tapioca starch – 70 g (approx. ½ cup) • Psyllium husk (isabgol)– 10 g (approx. 1 tbsp) • Salt – 5 g (approx. 1 tsp) Wet Ingredients: • Warm water – 350 ml total (divided use) • Olive oil – 35 g (approx. 2½ tbsp) • Dry active yeast – 5 g (ap

Ingredients - 1 cup foxtail millet 1/2 cup chana dal 1/4 cup toor dal 1 tbsp urad dal 1 tbsp ginger and green chillies, minced 1 carrot, peeled and grated 1 cup lauki/bottle gourd, peeled and grated 1 tsp Turmeric powder 1 tsp red chilli powder Salt, to taste 1/4 cup Coriander leaves, finely chopped For tempering Oil Mustard seeds Sesame seeds Curry leaves Instructions- Rinse and soak foxtail millet and lentils for 6-8 hours. Once done, grind smoothly and keep aside overnight to ferment In the batter, add ginger, green chillies, carrot, lauki, turmeric powder, red chilli powder, salt and coriander leaves. Mix it well.
