Add water, sugar, kosher salt, and strawberries to a pot and bring to a boil. Turn the heat down to a simmer, cook until strawberries begin to break apart, about 10-15 minutes. The longer the cook the thicker the syrup will be. Remove from heat and stir in the vanilla and lime juice. Strain syrup through a cheese cloth lined mesh strainer. Cool and store in refrigerator.
