BBQ sauce is a flavoring sauce used as a marinade for meat cooked in the barbecue cooking style, including pork or beef ribs and chicken. The common ingredients include some variation on vinegar and/or tomato paste as a base, spices, and sweeteners. The most common barbecue sauce is a Kansas City-style which uses tomato purée, corn syrup, molasses and vinegar and has a long shelf life. This style is less intense then the ubiquitous British brown sauce

BBQ Dry Rub Time: 10 minutes Yeild: about 2 cups Ingredients 2 tbsp Paprika 4 tbsp Chili Powder 2 tbsp Ground Coriander 4 tbsp Garlic Powder 3 tbsp Onion Powder 4 tbsp Ground Cumin 1 tbsp Cayenne Pepper 3 tbsp Black Pepper 3 tbsp Dry Crushed Oregano 1 tbsp Kosher Salt Method Mix all the ingredients together well For meat – rub all over meat and let marinate for 30 minutes before cooking For seafood – sprinkle onto seafood lightly and cook right away
