Healthy Avocado Chicken Salad

Mini Chocolate Cheesecakes (Vegan, Gluten Free)
For the crust: ½ cup gluten free rolled oats ½ cup flax meal 2 TBSP coconut oil 7 pitted Medjool dates For the cheesecake: 1 cup raw cashews (soaked overnight) ½ cup Coconut Cloud Original hot cocoa mix/powder ½ cup maple syrup 1/3 cup coconut oil ¼ teaspoon sea salt Directions: In a food processor, combine the crust ingredients until a loose dough starts to form. Press the mixture down into lined muffin tins. I used silicone muffin cups and just a standard muffin baking pan. Place the muffin cups with the pressed crust mixture into the fridge for 10 minute to firm up. While the crust is firming, make the filling. Drain and rinse the cashews and add them to a food processor with the rest of the cheesecake ingredients. Blend well until the mixture is smooth.

Add pickles (reserving 2 tablespoons for garnish), juice, onions, onion powder, and Old Bay while continuing to process until creamy. Add salt and pepper to taste. Store in refrigerator until ready to eat; serve with chips and crisp vegetables.
Frozen Dirty Chai Latte (Vegan, GF)
Ingredients: 1 ½ Tablespoons Coconut Cloud Happy Brain Coffee Unsweetened 2 Tablespoons Coconut Cloud Chai Tea Latte mix 5-6 ounces nut milk (we like oat milk or coconut milk!) 2 ounces water ¼ - ½ cup of ice Directions: Heat 2 ounces of water in a microwave safe mug/bowl for 30-45 seconds until very hot (but not quite boiling). Stir in the Happy Brain Coffee. Set aside to cool for a few minutes. Then, combine the Happy Brain coffee mixture, Chai Tea Latte mix, your nut milk, and ice in a high speed blender. Start with a little ice and then add more as needed and to achieve your desired consistency. Blend on high until frosty and smooth, pour into a glass and serve immediately. Enjoy!
