So why not combine those flavors with chicken thighs and rice for an easy one-pan dish?!? Hope you all enjoy and let me know how it turns out! Tools: 🔪- @mercerculinarytools Ingredients: 6 Chicken Thighs (boneless/skinless) 4 Cloves Garlic 3T Olive Oil 2T Balsamic Vinegar 1T Butter Salt & Pepper, taste 2t Dried Thyme 2 Onions 1.5C Long Grain Rice 2C Chicken Broth 1C Heavy Cream Preheat the oven to 425. Toss the chicken in 2T oil, 1T balsamic, garlic, S&P, and 1t dried thyme. In an oven safe pan, add 1T oil and 1T butter. Add the onions and season with salt and pepper. Once golden (15 minutes), remove the heat and add the 1t thyme and 1T balsamic. Toss and remove. Add more oil and the chicken thighs. Sear each side for about 2 minutes and remove (they will cook through in the oven). Add the rice and cook for 3 minutes. Then add the broth, cream, more S&P, and bring to a simmer. Ingredients: (Makes about 4-5 servings) 2 large rotisserie chicken breasts (skin removed) 2-3 stalks of celery 1 small shallot, peeled ¼ teaspoon black pepper Salt to taste ¼ teaspoon onion powder 2.5 teaspoons rice wine vinegar ½ cup Mayo (Dukes preferred)   Steps: 1)Cut the rotisserie chicken breast into cubes. Place the pieces in the bowl of a stand mixer fitted with a whisk attachment and blend on low speed until the chicken breaks up into fine shreds. 2)Using a box grater with medium holes, grate the celery and shallot, into fine pieces (discard the strings of the celery that may be left behind after grating it).
