Mozzarella cheese using only two ingredients. Whole milk and some vinegar. It's super simple. Let me show you how to make it. In the saucepan just add a half a gallon of whole milk. Whoa. Now just turn your heat to about a medium medium height. You want to warm your milk all the way to 110 degrees Fahrenheit. So be sure to stir and keep an eye on that temperature. And once your milk has reached 110 degrees go ahead and add in five tablespoons of white vinegar. It's going to start curding. In minutes you should see curds. You could use some lemon juice if you don't have vinegar. See those little small solid bits? That's what you're looking for. Now you want to turn off your heat and just go ahead and cover your milk and allow it to set for about fifteen, maybe 20 minutes and after about 15 minutes, you can see that the curd has separated from the whey. Now, just strain out the curd from the whey. Get a cheese cloth or even a mesh strainer will be fine and put it into the strainer. Just separate all of this until you have nothing but whey left in your pan. You want to get as much liquid out of the curd cheese as much as possible. And once you've strained out all the way, this is what it should look like. You see how it looks not quite smooth. Now you need to go ahead and reheat this. I'm going to reheat it in the microwave. You could reheat it in your way but I'm going the easy route. I'm going to heat it in the microwave for about 30 seconds. And after 30 seconds in the microwave it's kind of melted and it's going to be smoother. Now if there's any extra whey on it, just go ahead and pour it off. Now you just want to go ahead and start stretching it and just pull it and fold it. Pull it and fold it just do this until it's all smooth. So now that it looks like that, you want to go ahead and form it into like a mozzarella ball. Just like that. Now you want to cool it down. Put it in a bowl and add some cold water. You want to allow it to sit in the cold water for about 15 minutes. And after about 15 minutes of chilling in the cold water, your mozzarella cheese ball is ready to eat. You can use this in your lasagna. You can use this in your pizza. And just like that, you have homemade mozzarella. Mm. Homemade

A lot of people have been asking about the ricotta so I'm going to show you one more time how to make the regatta. This is what we're going to need. A gallon of milk, a quart of heavy whipping cream, a teaspoon of table salt, a tablespoon of sugar, and a quarter of a cup of white distilled vinegar. The first thing we do is we put the the leche in here, the milk, the latte, You're putting the whole gallon, right? The whole gallon. Alright, we're going to start off fire. No. Yeah it's that one. Okay. We have our milk in there. Now we're going to put our heavy cream. Which I got from the bakery so this is real cheap ricotta and basically we put the ingredients in it we're going to bring this to not a rolling bowl but just a boil And then we put the vinegar. Now I'm going to put of sugar. A tablespoon of salt and we'll put the full recipe again in our family talk and taste. Oops. That's it. There's our salt. I'm going to give this a little stir. It's my favorite toy in the kitchen right here. Yeah. We're going to give this a little stir so that we can get nice put together. We're going to bring this to a rolling boil and we're going to put in our last ingredient, the vinegar and I'll explain after this comes to a a boil. We'll see you in about it takes about a half hour. Honey, what are we doing? So, put the camera right so you guys could see right there see the little bubbles that's how I could tell so for the last couple of minutes so this been born about 20 minutes and medium now I put the vinegar in now a lot of people can use you know they use lemon juice they use Renite I use vinegar I find it easy to use and it's ready to lavail in your house and you could see, look, it's already started to curdle. See? It's basically separating the fats from the way. Look at that. See? Now, I'm going to shut it off. Bella Bella. See? Look at that. See already how the liquid's getting all separated. How simple was that? And you get fresh ricotta. Gallon milk, quarter of heavy cream, quarter of a quart, quarter of a cup of vinegar, tablespoon of salt, and a teaspoon of sugar. You'll never buy it again. You'll want to make it after you taste this. You know. So I'm going to bring this to the table and then I'm going to straighten it to the baskets and I'll show you guys how to do that in a few seconds. Okay my love. Nice and bold it. We put the vinegar in. And now we get all the gold. Ooh looky looky. Arigota. Arigota. I bought these baskets on on Amazon. I'm going to tell my son to put them in our Amazon store if they're not in there yet. Basically, I use this because Melon has this beautiful tool here that has the a built-in strainer. Look at that, huh? A school of pasta with a handle. Just a little patience. I gotta admit the first time I did it, it didn't come out perfect. You know, I had to get some timing done but like I said, this took about 50 minutes. I put the vinegar, kept it on the heat for like another five, you know, and then I give it a little stir and kept it on the fire and then I took it off It's a off a little bit. It's a looking beautiful. It is. Look at that. So all the excess juice comes out of that basket to thicken it, right? Yeah. And there's so many things you can do with ricotta ricotta is delicious and Easter time I know we used to do it all the time because we we used to make the pizza rustica with it. We used to make our pasta ricotta. Uh I remember one of my uncles used to smoke it. Smoked ricotta was delicious.
