• 6 Chicken thighs, boneless skinless
• 1 Salt & black pepper to season thighs
Produce
• 1 tbsp 1 inch fresh ginger, fresh
• 2 Carrots, large
• 1 tsp Coriander, ground
• 4 large cloves Garlic
• 8 Medjool dates
• 1 Parsley, fresh
• 2 Yellow or white onions
Canned Goods
• 2 1/2 cups Chicken stock
Condiments
• 2 tbsp Brown sugar or 1 tablespoon honey, light
Baking & Spices
• 1 1/2 tsp Cinnamon, ground
• 1 tsp Paprika
• 1 tsp Turmeric, ground
Oils & Vinegars
• 2 tbsp Olive oil, extra-virgin
• 1 tbsp Red wine vinegar
Nuts & Seeds
• 1 tbsp Cumin, ground
Other
• 2 (14 oz 400 g) or 1 (28 oz 800g) crushed tomatoes, fire-roasted tomatoes are preferable
