My Easy Beef Bulgogi Bowls are made with roasted vegetables and ground beef bulgogi, served over rice with a spicy sriracha mayo. This dinner can be made on a busy weeknight in under 30 minutes. The meal has become one of my go to dinners when I do not have a lot of time to cook but still want something healthy and delicious.

• 1 lb Ground beef, lean
Produce
• 2 Carrots, large
• 1 tbsp Garlic
• 2 Green onions
• 1 Zucchini, large
Condiments
• 2 tsp Lime juice
• 2 tbsp Mayonnaise
• 5 tbsp Soy sauce or tamari, low sodium
• 2 tsp Sriracha
Baking & Spices
• 2 tbsp Brown sugar, packed
• 1/2 tsp Pepper
• 1/2 tsp Pepper, ground
• 1/2 tsp Salt
• 1 Sesame seeds
Oils & Vinegars
• 2 1/2 tbsp Olive oil
• 1 tbsp Rice vinegar, seasoned
• 1 tsp Sesame oil, toasted
