5min · 2 servings Ingredients • 80 g baby spinach • 2 Lebanese or Persian cucumbers • 15 cherry tomatoes • ¼ red onion • 1 ½ cups chickpeas • ¾ cup cooked tricolour quinoa • 60 g kalamata olives Dressing • 3 tbsp extra virgin olive oil • 1 lemon squeezed • 1 tsp dried oregano • Salt and pepper to taste
