This healthy salad is colourful and fresh, being full of protein & nutrients. It's perfect for meal prep and is vegan.
You'll need:
Quinoa (cooked)
Baby spinach
Cucumbers
Cherry tomatoes
Chickpeas
Red onion
Kalamata olives (my fav!)
For the dressing I kept it simple, using olive oil, lemon, oregano and salt and pepper
