Prep time: 15 minutes 
Cooking time: 40 minutes 
Recipe yields: 4 servings 

Ingredients:
•1 large eggplant or 2 medium size eggplants 
•1 large onion 
•4 garlic cloves 
•1/2 cup  mayo 
•lemon juice from 1 juicy lemon 
•salt to taste 
•paprika and toasted pine nuts for garnishing 
•1/4 cup avocado oil 
•avocado oil spray 

Directions:

1. Preheat Oven: Preheat your oven to 400°F (200°C).
2. Prepare Eggplant: Cut the eggplant vertically down the center. Score each half diagonally in one direction, then diagonally in the opposite direction to create a diamond pattern.
