My family is from Mauritius and the cuisine is a mix of African, French, Chinese and Indian. If you see me making a dish it's probably a mix of these cultures because that's how I was brought up. This is a Buramese inspired tofu using lentils instead of chickpea flour 1 cup of red split lentils soaking in 2 cups of boiling water, when it is cooled down its time to blend it. Cook on medium heat till it is thickened then add 1.5 cup of water and let it thicken again. Pour it into a dish and let it sit overnight. I like to cut it up and add oil and spices before I place it in my air fryer for 20 mins flipping it in between.
