Place the baguette cubes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to evenly coat. Toast for 5 to 7 minutes until lightly golden brown. Set aside to cool slightly. Meanwhile, make the dressing. In a small bowl, add all of the ingredients and whisk until well combined. Set aside.
