Here’s what you’ll need:

INGREDIENTS: 
2 large chicken breasts (~400-450g)
1 XL egg, whole 
Herbs (I used basil)
Sundried tomatoes (oil drained)
¼ cup parmesan cheese
2-3 Garlic gloves (optional)
45g breadcrumbs
Salt & pepper, to season 

TO SERVE (i.e. pesto orzo salad): 
Cooked orzo/risoni (or alt pasta/rice)
Rocket/Spinach leaves, chopped
Green peas, thawed 
Cucumber, sliced
Spring onion (optional) 
Parmesan (extra) 

HOMEMADE TZATZIKI: 
~3 tbsp yoghurt of choice
~1 tbsp extra virgin olive oil 
¼ medium cucumber finely grated (& strained)
Salt & pepper, to season 

METHOD:
1. Place meatball ingredients into a food processor and process until well combined.
