Start by adding three to four cups of cooked shredded chicken to a Dutch oven and then add one can of sweet corned peppers. One can of Rotel original. One can of green chilies. And one can of rinsed and drained pinto beans. Uh then you're going to add one small diced onion. Three to four minced garlic cloves and ten ounces of green enchilada sauce. This next ingredient's going to ruffle some feathers but I swear it makes it better. One can of cream of chicken soup. Just pluke it right in there Trust me. Uh now we can add some spices. A bay leaf. A teaspoon of chili powder. A teaspoon of cumin. A teaspoon of salt and a pinch of black pepper then top it all off with a quart of chicken broth. Pour all of it in there. Hopefully use the bigger pot than I did. Uh give this a quick stir. Bring it to a simmer. Put the lid on. Let it simmer for 30 minutes. When that time is up take the lid off. Get rid of the bay leaf. Give it one last quick stir. Get a bowl. Fill the bowl up. If you have cilantro your pocket. Throw it on top of there. You know what? Put some cheese on top of there too. Definitely put some sour cream in the top the whole thing off with some hot sauce like this. Grab a spoon. Scoop up a big old bite of this and then put the whole thing in your mouth. Oh yeah. I love this. And if loving chicken tortilla soup is wrong I don't want to be right. I'll see you in the comments.
