Carrot cake (gulrotkake) as a delicious send-off for April! The recipe is from my first cookbook, but this time in Bundt form. I didn’t have any cream cheese on hand for the frosting, so I made a simple glaze of sour cream, about 18 percent fat, mixed with confectioners’ sugar. Just loved how it came out. I baked it for 50 minutes, but it probably could have come out a few minutes earlier - my new stove is just so much more powerful than the last one. Moist, bouncy, the right amount of sweetness
