If you have isomalt, you can certainly use some! But if you don’t and just want to make some simple hard candy for the center, you can with just sugar and water. Here’s the recipe: For cookies: 1 ½ cups butter, softened (300 grams) 2 cups white sugar (400 grams) 4 eggs 1 teaspoon vanilla extract 1/2 tsp almond extract 5 cups all-purpose flour (600 grams) 2 teaspoons baking powder 1 teaspoon salt For candy: 1 ½ cups sugar (300 grams) ½ cup water (180 ml) METHOD Step 1 Cream together butter and sugar until smooth. Beat in eggs, vanilla, and almond extract. Stir in the flour, baking powder, and salt. Dough is more easily handled after chilling (1 hour or more,) but this step is not necessary. Step 2 Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with 2”-3” wide round or square cookie cutters. Cut out center in desired shape. A smaller cutter works great for this. Place cookies 1 inch apart on cookie sheets lined with parchment or reusable silicone mats. Step 3 Bake 6 to 8 minutes in preheated oven. Cool completely. Step 4 To make the candy, place water and sugar in a medium saucepan and stir to dissolve. Cook on high heat, making sure to wipe any sugar that forms along the sides of the pan with a wet pastry brush. We don’t want the candy to crystallize! Insert candy thermometer and cook without stirring until mixture reaches 300 degrees F (149 C.) Step 5 Remove from heat and allow the Candy to stop boiling before carefully spooning into cookies.
