My family also hosted more fish fries than I can count. I would watch my big mama and auntie's dredge fillets in that perfectly seasoned cornmeal blend and when the fish hit the grease, ooh hot, crispy, and spiced to perfection. Flaky on the inside and cram on the outside. Get into this old school recipe.

This meal... | By BrassCuisine | I've been craving deep fried catfish ever since I saw it on TikTok a couple of months ago. So today I buckled down and I made it. I'm so happy I did. They turned out delicious. My family enjoyed them. So let me show you how I prepared them. In a mixing bowl I added some frozen drained spinach. You can use fresh spinach if you prefer. Some softened cream cheese and some lump crab meat. Now crab meat is optional. You can also add shrimp if you like. Or whatever it is that you desire to put in your stuffing. I'm also going to add some dried sun-dried tomatoes and we're going to season with BrassCuisine's garlic pepper. This will be the only seasoning that we are seasoning our stuffing with. So again, we have drained spinach, cream cheese, lump crab meat, sun-dried tomatoes. We're also going to add some Parmesan and mozzarella cheese. So, this is our filling. We have our clean Catfish fillets. You can use any fish that you prefer. You guys know I am a catfish lover. So, of course, I had to use catfish. Now, I am seasoning my catfish with salt-free Creole. This is the only seasoning that I will put on my catfish because the fish fry is already pre seasoned that we'll be using to fry the fish in. I'm only going to season one side. We're going to take our stuffing and add it to the backside which is the unseasoned side of our catfish. Now, you do not want to over stuff the fish. You just want to put just enough to cover the fillet, you're going to take another one of your seasoned fillets and layer it on top. Try your best to find fillets that are around the same size so that they will fit perfectly, okay? Now, you're going to repeat this process for the remaining of the fillets you have. In this case, we are going to be stuffing three catfish. So, total of six catfish fillets will be utilized. Another tip is to make sure that your stuffing or your filling is not too loose because the key is to ensure that your stuffing does not come out of the fillets during the frying process. So, the thicker your stuffing is, the better and this is how they should turn out. Now, we're going to take some toothpicks because we want to stick these on the side kind of like sewing them together to ensure that our stuffing does not come out. Now, they don't do not have to be perfect but you do want to make sure that you are sticking them or enclosing them to where the stuffing is somehow secure. Now, while your grease is heating up, we are going to crack an egg for our egg wash. We're also going to utilize some buttermilk. You can use a whole milk or 2% milk if you prefer as it really doesn't matter. Now, we're going to season it with again our salt-free Creole. It's available on my website@BrassCuisineSpices. com. Gonna whisk this all together because this is going to be our egg wash. I'm also using my pre-season southern fish fry. It's also available on my website to toss my fillets in. I love my pre-season fish fry because it gives off a nice flavored golden brown texture and you guys will see that when we finish this tutorial. Place your fillets in the egg wash ensuring both sides are covered and into your fish fry. You want to pat your fish fry on your fish to ensure that all is covered. Now, we're going to fry our stuffed catfish. I am using a presto deep fryer but you can also utilize a deep pan and fry on the stove. Look at how golden brown my stuffed catfish turned out. You're going to repeat the process until they're all completed. Now, we're going to sit in the oven while we prepare our potatoes. I air fried some potatoes. We're going to take the filling out of the potatoes because I want to make sure that everything is evenly incorporated. I am going to mix some butter, sour cream, brass cuisine, garlic pepper. I also have some bacon and three different cheeses. We're using mozzarella cheese, Kobe Jack, and gouda cheese. I'm going to mix this up evenly and then we're going to add them back into our potatoes. These are twice stuffed I love to do it this way so that when we're eating our potatoes everything is evenly incorporated we're going to top it with some cheese and put it back in the oven and this is our final product we served it with some sweet fresh corn on the cob this meal turned out oh so amazing oh so delicious you guys have to try this we are going to cut into one of these fillets so that you can see how delicious our stuffing turned out. When I tell you this meal was top tier, this meal was top tier. I hope you enjoyed.
