Noodle Dough - 400g plain flour - 200ml water - 1/2 tsp salt To Stir-Fry - 350g fresh noodles - 2 tbsp vegetable oil - 350g minced pork, beef or chicken etc. - 1 small onion, thinly sliced - 2 cloves garlic, thinly sliced - 2 - 3 cups spinach - Salt and pepper, to taste - 3 tbsp light soy sauce - 1 tbsp dark soy sauce - 1 tsp sesame oil - 1 tbsp honey - 1 tbsp chilli oil, optional   To make the noodle dough combine flour and salt in a large bowl. Slowly pour in water whilst mixing with a pair of chopsticks. Turn onto your work bench and knead until smooth, about 10 minutes (you can use a mixer to do this job for you). Cover with a cling wrap and set aside to rest for 30 minutes. Cut into 4 portions and working with 1 portion, roll to your desired thickness, using cornstarch to dust. Fold the dough onto itself then cut to your desired thickness. Cook noodles in boiling water for 1-2 minutes, strain then run under cold water. Use as desired. To make the stir-fry, heat oil in a wok or pan over hight heat and add in the minced meat. Cook, breaking with your spatula or wooden spoon until cooked through and slightly crisp. Add the onion and garlic, and continue to cook until the onions have softened a little and starting to brown. Toss through the spinach until just wilted and season with salt and pepper. Add in the cooked noodles along with light soy sauce, dark soy sauce, sesame oil, honey and chilli oil. Toss until well combined then taste and season to your liking.
