Check out this new take on CAJUN SHRIMP SCAMPI 🤤 INGREDIENTS - 2 dozen 13/15 shrimp (shell on) - 1.5 tsp baking soda (for tenderizing) - 1 stick of Kerrygold Irish butter - 1 tbsp of high quality extra virgin olive oil - 2.5 tbsp fresh minced garlic - 1 tbsp garlic powder - 2 tsp onion powder - 1 tbsp old bay seasoning - 1 tsp cajun seasoning - 2 tsp chili powder - 1 tsp seasoning salt - 1/2 tsp of black pepper - 1/2 tsp of thyme - Dash of MSG (optional) - 1.5 tbsp of fresh chopped parsley - 1 large lemon 1. Devein and butterfly the shrimp 2. [For tenderizing] add baking soda to the shrimp; making sure to get in between the shell. Marinade for 30 mins 3. Set oven to broil 4. To a cast iron pan or skillet on medium heat; add butter & olive oil. Once melted, add in minced garlic & sauté until slightly golden 5. Blend the dry seasonings and transfer into step 3 (garlic butter sauce) 6. Set on low heat & sauté for 1min then fold in 1/2 tbsp of chopped parsley & 1/2 of the juice from the lemon 7. Turn off the heat & transfer 80% of the scampi sauce into a bowl and set aside 8. Let the pan cool for 5mins 9. Layout the shrimp onto the same pan (if you don’t have a cast iron pan; use a baking dish) 10. Drizzle the scampi sauce over the shrimp. Use your fingers to spread evenly 11. Add a sprinkle of parsley 12. Transfer to the oven and set the timer to 5 mins (middle rack) 13. Once fully baked, remove from the oven. Add a squeeze of lemon & parsley **Personal preference to layout the shrimp like this. You can also sauté the shrimp in a pan over the stovetop. Sautéing will give the shrimp a more even coating & bolder taste of the scampi sauce.
