What if I told you we could easily transform salmon rice and seaweed into super tasty sushi cups? You're going to be surprised by how delicious they are. After thoroughly rinsing the rice, transfer it to a rice cooker and pour the water inside. The ratio of rice to water is about one to one and a quarter. Choose the rice setting and cook for about 30 minutes. Remove the rice from the rice cooker. Let's cut the salmon into small cubes. First, cut it into thin slices. Then cut it into small cubes. In a bowl, combine the mayonnaise, Sriracha sauce. If you can't eat spicy food, you could also use ketchup and salt. Whisk. Add the salmon to the mixture and combine everything. Take the roasted seaweed. Cut each one of them in half. Do the same with the rest. Stack two sheets on top of each other. Scoop about one and a half tablespoons of warm rice on top. The residual heat will soften the seaweed making it easier to place in the muffin tin. Repeat this with the remaining seaweed and rice. Add the salmon over the rice into each cup. The shrimp is tossed in a delicious sauce and gets nice and crispy in the oven—the perfect handheld, bite sized appetizer or meal! 1 1/2 cups cooked rice, I used jasmine but any rice will work 3 sheets nori, cute into 12 squares 1 lb peeled and deveined shrimp (uncooked), cut into small pieces Pinch of salt 1/2 cup softened cream cheese 3 tb kewpie mayo 1 tsp sriracha 2 tb soy sauce or coconut aminos Chives for garnish Prepare 2 cups of rice according to package instructions and set aside. Preheat oven to 400F. Next, pat dry the shrimp and cut into small pieces. Add a pinch of salt. In a separate bowl, add the softened cream cheese, kewpie mayo, sriracha and soy sauce/coconut aminos. Mix well. If the cream cheese makes it hard to mix, just microwave for 20 seconds. Pour the sauce onto the shrimp, and toss to coat well. Cut the nori sheets into even sized squares. Ingredients 4 cups warm rice (preferably sushi rice) Sesame oil 2 tbsp rice vinegar 1 pinch of salt 1/2 tsp sugar 2 filets of salmon (mine were air fried with a coating of garlic powder, onion powder and garlic salt) 8 imitation crab sticks shredded 1/2 cup Japanese mayo 1 tbsp soy sauce Unagi sauce Furikake For toppings Sliced cucumber Sliced jalapeno Avocado Sriracha Tobiko Green onions 1. Lightly grease a baking dish with sesame oil. Mix vinegar, salt, and sugar in a bowl and drizzle over rice and mix. Flatten layer of rice on bottom. Top generously with furikake. 2. Mix crab, salmon, mayo, and soy sauce in a separate bowl and layer over rice. Add a drizzle of unagi sauce and mayo. Sprinkle another layer of furikake and cover with foil. 3.
