Filled with the goodness of ragi flour and jaggery, this cookie makes for a healthier choice. Ragi is high in fiber and low in calories and fat, that will aid in weight loss. And on the other hand, jaggery has lower glycemic index than refined sugar, which means it prevents blood sugar levels from spiking suddenly, which helps reduce the risk of insulin resistance and aid in weight management. Ingredients required

½ cup low-fat butter, ½ cup jaggery powder, ½ cup ragi flour, ½ cup almond flour, a pinch of salt, ½ tsp baking powder, 3 tbsp milk, 1 tsp vanilla essence, and 2 tbsp chopped almonds

Step 1

Mix butter and jaggery powder in a bowl and start blending it using a hand mixer.

Blend until the texture becomes light and fluffy.

Now add in ragi flour, almond flour, salt and baking powder. Also, pour in milk and vanilla essence and mix well until you get a doughy texture.

Keep this in the refrigerator for 15-20 minutes to rest.

In the meantime, line a baking tray with parchment paper and preheat the oven to 180°C.

Step 6

Make small roundels of the dough and give it a cookie shape. Place on the tray and top with some chopped almonds and bake them in the oven for 15-20 minutes.

Once done, let them cool down to room temperature. Store in an air-tight jar.
