Mediterranean Diet Plan 🇺🇸 on Instagram: "Chicken Salad Cucumber Boats 🥒 A refreshing, protein-packed snack or light meal—easy to make, fun to eat!

Ingredients
12 oz pre-cooked chicken, chopped
1 dill pickle
2 boiled eggs
1/2 small red onion
1 tbsp mustard
1 tbsp yogurt mayo
Salt & pepper to taste
1 cucumber, halved and hollowed out with a spoon
Chili flakes or your favorite toppings (optional)

Instructions
1. On a large chopping board, finely chop chicken, pickle, boiled eggs, and red onion
2. Add mustard, yogurt mayo, salt, and pepper. Mix until well combined.
3. Spoon the mixture into the hollowed cucumber halves.
4. Sprinkle with chili flakes or your favorite toppings.

Air Fryer: Cook at 200°C (400°F) for 12–15 minutes, flipping halfway. Keto Diet & Recipes on Instagram: "Beef & Cheese Quesadillas By @kristyslifestyle RECIPE: Makes 12 INGREDIENTS: 6 tortillas (I used 0 carb Hero tortillas) 1 lb lean ground beef 2 Tbsp Kristy’s Homemade Taco Seasoning 1/4 cup water 1/4 cup fat free refried beans 1 cup shredded Colby Jack cheese, divided DIRECTIONS: 1. Preheat oven to 400 degrees F. 2. In a skillet over medium heat, scramble the ground beef until cooked through. Drain excess grease if needed. 3. Stir in the taco seasoning, water, beans and 1/2 cup of cheese. Once combined and melted, remove from heat. 4.
