Nanz Bakehouse on Instagram: "Lemon ganache recipe ⬇️  -150g white chocolate  -70g fresh cream -1 tsp lemon juice -1 drop yellow food color  - zest of 3 lemons  Method  -In a small saucepan, heat of cream over low-medium heat until it’s about to simmer. Add the zest of 3 lemons and let it infuse for 5 minutes on low heat. This will enhance the lemon flavor in the cream. -Strain the Cream over the white chocolate to remove the zest. -Place the bowl in the microwave and heat in 15-second intervals, stirring after each interval, until the white chocolate is completely melted and smooth. -Add 1/2 tsp lemon juice and 1 drop of yellow food color . Whitney Berge on Instagram: "BLACK CHOCOLATE GANACHE   If you ever make a Black colored cake, covering it with a Chocolate Ganache is a great option. When working with a ganache, I find that working with the cold/frozen cakes is usually the best route because it will set up faster. And when you go to freeze again after decorating, there is a very low chance that it will have any condensation happen. (Which is really nice especially going into the warm summer).   To make the black ganache, I made my semi sweet chocolate ganache, and let it cool off for about an hour. I also put it into the fridge to cool it just a bit more before using. I transferred the amount to a liquid measuring cup and used @Chefmaster “Coal Black” color. Mix well until combined. It’s got an intense pistachio flavor that comes from homemade pistachio paste-so good you’ll want to put it on everything. It took me four tries to get the consistency just right, but it was totally worth it. This ganache is perfect for filling your sponge cakes, sweet rolls, donuts, éclairs, or whatever you fancy. If you love pistachio, you’ve got to try this recipe. I think you’ll love it! When I made this recipe, I found beautiful unsalted pistachios from Iran at a local shop. Not only do they taste amazing, but they also have this dark green color that almost looks unreal. The flavor was fantastic from the first batch, but the ganache was too firm.
