Enchilada Chicken Salad Meal Prep - 3 chicken breasts, cooked and shredded - 1 red bell pepper, diced - 1 yellow bell pepper, diced - 1/2 red onion - 1/4 cup chopped cilantro - 1 small can of green chilis - 1/2 cup diced roasted tomatoes, drained Sauce: -3/4 cup plain Greek yogurt -1/2 packet taco seasoning -1/4 cup mayo -juice from 1 lime 1. Mix together chicken, bell peppers, cilantro, green chilis, red onions, diced tomatoes 2. Mix together ingredients for sauce and add them to the chicken salad 3. Mix until well coated with sauce 4. Enjoy for the next 4 days in the fridge 5. I like to eat mine with tortilla chips and a little heated but you can eat it cold!
