This... | By My Life | Alright, now that I've got my corn tortillas placed into my muffin tin, I'm going to come in with my cooked ground beef and I'm just going to put a little bit of ground beef into each one of my cones here. We're making a really quick, easy dinner tonight. This is perfect for a weekday and this is about a pound of ground beef here and I'm just going to kind of use all of this to top this off. I'm going to make sure we're using all of our ingredients Okay. That looks really good. Alright now I have got my green chilies. And I'm just going to use my smaller scooper to put little scoop of that into each one of my tins here. We're making little individual servings for people. I think this is going to be really tasty. As you can see, it's super easy. Only thing we did so far was cook that ground beef. Alright, I think that looks perfect. I'm just going to smooth this out a tiny bit. This is going to be a fast, fun family dinner. Okay, now I've just got my regular red enchilada sauce. I'm using the mild. You can use whatever flavor you like but I'm doing the mild because I think it's most popular with everyone. Ooh yeah and we are just going to drizzle this sauce onto our tortillas there. This is going to be an enchilada-inspired dinner and we're making all these tortillas nice and wet with our enchilada sauce just like how you like it when you make regular enchiladas. These are so fun because they're just the individual servings. I love to do kind of simple Mexican inspired dinners for my family. I feel like it pleases everyone's palette and now we're going to top this off with my favorite ingredient. Little bit of fiesta blend. This is just the Walmart version and it's a finely shredded and I am just going to come in here. I'm going to go big or go home with this cheese and I'm going to put some of this cheese onto each one of my cones and it was as simple as that. You know the one thing I would say is with that ground beef throw a little taco seasoning in there when you're cooking it. You know so it gets that extra hint of flavour of spices. But other than that this is a perfect super simple easy dinner. Got our little chilis in there. We've got our delicious cheese, our ground beef with some protein. And we've got our enchilada sauce and our tortillas. What more could you want? Okay I am just going to pop these into the oven at 350 for 20 minutes and then we'll be ready for dinner. Alrighty, our individual enchilada cups are ready. They baked in the oven for just 20 minutes. Just a chance to let that sauce really marinate and everything to crisp up and I am so excited to dig in here and give this a try. Alright, I'm going to come in with my spoon. I'm going to get this underneath my cup. Look at that. Perfect. Look at that beautiful flower there. It's gorgeous. I'm just going to add a little bit sour cream What you call these enchilillies? Enchillies. I'm just going to add a little bit of sour cream to this because I like sour cream. Yum yum yum. Okay and now I'm just going to get myself a nice ooh look at that. Oh yeah. This baking sheet is about a nine by 13 I believe. And we're just going to start spreading it out and covering up that little patch in that hole, huh? I'm trying. I forgot to mention this is an ungreased baking sheet. Okay. Now, we're just going to pierce this dough with a fork all over. Hoping that it doesn't shrink when it's in the oven. Uh are my eyes deceiving me or is that a new apron you have on? It is. I like it. I thought I'd have a little fun. A bunch of lemons. Yes. Ooh. That doesn't mean I'm sour. I wasn't going to save it. Oh okay well. I never know with you. Uh I like it. That's good. I thought it was very summery. I agree. Alright, I think we're good here. We're going to assume we are. Yep. To the oven we go. It's preheated on three seventy-five. This will bake about 10 minutes till it's nice and golden. While that crust is baking, we are going to brown some ground meat. This is one pound. We'll get this cooking and use our handy-dandy smasher that you know I love so much. And add some more things. Okie dokie. That looks good. Next we are adding one packet of taco seasoning. We're using original. You could use mild or spicy whichever you prefer. To that we are adding two thirds of a cup of water. Can smell it already. I know. And this is going to cook for about 5 minutes. Hey, it's actually been 12 minutes. Looks pretty golden to me. Yep, it's getting brown. That's a good thing. Next, we take our taco meat. While it's still hot like that, I'm just going to start spreading. Okay. Squeeze all of that. This is like a huge flat taco. It's going to be taco pizza. Mm. I think it's going to be really good. I do too. Next, we're going to layer some cheese. And you know. This is the fiesta blend huh? Of course. Mhm. You know me. I'm not going to measure. We are doing this to taste. But we want it to cover pretty well. Okay, now this goes back to the oven still on 375 and this will bake for about four or five minutes just till the cheese is melted. Oh, look at that. Looks good. Looks like it's time to me. Well, this smells really good. I'm excited because this is dinner. Yes, that looks great. Mhm. So what are we going to add to this? Now we're going to do some toppings. We have some quartered grape tomatoes. And we're just going to start spreading. I think that's good. Mhm. What else we got? We have some sliced green onion. We're going to do a little bit of that. Little bit of this. This is shaping up to be pretty pretty good. I agree. Mhm. Now the recipe calls for cilantro. We do not like cilantro. So we have some lettuce. We're so sorry. If you like cilantro don't be offended. Nope. Theo free to add it. Is that enough for you? Yeah, looks great. And how about a little salsa? Perfect. Medium mild? This is medium. Uh oh. You know what that could be a little spicy. It could be. For me. Or maybe. Maybe you should try it this time. Mm I think I'll let you try it. Why? I don't know. I just seem funny about that. Gonna shake these in a thirteen by nine breeze dish. Nice. And we're going to put them in the oven for 10 minutes. Okay. We just cook for about 10 minutes. Okay. This is called the lazy enchiladas. Lazy enchiladas. Okay. Don't touch the pan please. Scorch them hot. Yes. So now you're going to take the large can of enchilada sauce. Mhm. And we're going to pour it over. Handful of enchilada sauce. It is a lot of enchilada sauce. Okay and then I've got I got fiesta blend cheese. Mhm. And we're going to top it with some cheese. Okay. And these are beef taquitas. If you like enchiladas maybe you could get this done real quick. Total of 25 minutes and you're done. That's not bad at all. So now we're going to put it back in the oven for 15 minutes. Okay. And it'll be done. Alright. Okay let's look at our lazy enchiladas. Look at that. See my child will like this. I mean they look like enchiladas to me right? Okay I'm going to try this one here because it's not an enchilada sauce that much. That looks pretty good. Oh wow. Two cans of asparagus that we have drained and you'll want when you drain it, save one cup of the sauce because we will need it. And we're just going to kind of mix them out in there. Interesting. Okay, now we're going to take this over here and make our sauce. Okay. For our asparagus. I'm going to sit it right here. Uh huh. Okay, I've got four tablespoons of butter that I've melted in here. Nice. I'm going to add the cup of the reserved. Asparagus juice. Yes. That in there. And we got that out of the can that we just drained it. Yes. And then we're going to add in four tablespoons of flour. Okay. Or I got pre measured out. A teaspoon of salt. 4th teaspoon pepper. Interesting. And this recipe was from our grandma. Yes. So we'll see how this is. A little milk in there. Mm hmm. Almost like you were making milk gravy. Okay. It's thickened up now. Cut that off. Mm hmm. We're going to take it over to our asparagus. Okay. Okay, what you're going to do is add half of the sauce. Uh huh. Now, to the asparagus. It does look like gravy. So this is a casserole pretty much? Yes. So you got about half in there. Mhm. Then you're going to take your cup and a half of cheese shredded cheddar cheese. We're going to add that on there. Does this bake or is this a no bake? No it's a bake. Got that. Now you'll add the remainder of your sauce. I don't know why it says two different things but okay. What do you mean by that? You know it says do half and then the other half. Yeah. Not sure why. Pretty interesting but that's okay. We're just doing it like the recipe calls for. All good. We did drop something but he. It's just a can. It's part of the kitchen time. Yeah, it's just a can so it's fine. It ain't going to hurt anything. Mm hmm. Okay, then. Top with the remaining of your cheddar cheese I have to say I believe it's going to be good. It does. Pounds of ground beef. We're going to brown up. All the meat looks nice and brown. Okay. Now, we are going to add four chopped jalapenos. Mm hmm. Or jalapenos as my mom would say. Yes. And about a medium onion. Okay. Simmer on here for a few minutes. Alright, looks good. Okay, we're going to have this set aside. While we make the batter. Okay, we're going to take one can of cream-style corn. Mm hmm. Dump that in a bowl. With one cup of whole milk. Mm hmm. A half a cup of vegetable oil and 2 eggs. We're going to combine this all first. Now, now we're going to add one cup of self-rising cornmeal. Three tablespoons of all-purpose flour, one teaspoon of baking soda, and 1 teaspoon of salt. Okay, we're going to combine all this up. Okay, now what you're going to do is take half of this batter poured in a nine by thirteen grease casserole dish. So we're going to take this. Do half in here. Make this a little bit more. Mm hmm. Okay. Now, you're going to take cheddar cheese. Mm hmm. I've got four cups here. We're going to put two cups on now. Okay? Mhm. Then you're going to take your hamburger mixture and add it mixed. All of it? All of it. Mm. I can just turn it over. That is a little. Now we did two pounds of meat but you can do one. Yes you can use one but we thought we might just have some good old meat in here. I mean it looks pretty good. Okay, once you've got the meat on there with your jalapenos and onions, you're going to take your other two cups of cheddar cheese. Mm hmm. Put it on there. So you got four cups of cheese on the recipe. Damn it looks good. Okay and the last thing you're going to do pat it down a bit. You're going to add the remaining of your butter. Mm hmm. On top. Take our spatula. Get all scooped all the out of there. Spread it out. Now, this will have to cook for about an hour. Mm hmm. On 350. But then you'll have a good casserole for dinner tonight. Looks good. Let's try a bite of this. Okay. Let's try here. Sure. Oh it comes out perfectly. Oh look at melted cheese. Mm. And the jalapenos in there. Mhm. Yep there's lots of them. I did six. Mm.
