Ingredients: • 1 cup mashed ripe banana (2-3 bananas) • 1 egg • ½ cup buttermilk (or 1/2 cup milk + 1 1/2 tsp vinegar) • 1 cup coconut oil, melted • 2 tsp vanilla extract • ¾ cup granulated sugar • 2 cups all-purpose flour • 1 tsp baking powder • ½ tsp baking soda • ½ tsp salt • ¼ cup @oat.haus Banana Bread Granola Butter, for filling Baklava Topping: • ¼ cup butter, melted • 1 cup chopped nuts (pistachios, almonds, walnuts, etc.) • ⅓ cup brown sugar • 1 tbsp maple syrup • ½ tsp cinnamon Honey Glaze: • ¼ cup honey • 1 cup powdered sugar • 1 tsp lemon juice • 1 ½ tbsp warm water Instructions: • Preheat the oven to 350F and generously grease a bundt pan with baking spray, and then lightly dust with flour. 
Prepare the baklava topping first.
