Beth on Instagram: "Fennel tart - so simple to put together, but packs a massive flavour punch Recipe Makes 1 tart 1 320g sheet rolled all butter puff pastry 3-4 heads of fennel, fronds picked off and washed, bulbs cut into 6 or 8 wedges 1 good knob butter 1 tbsp honey 1 tbsp fennel seeds Few sprigs thyme, leaves picked Salt & pepper Cooking oil Crumbled goat’s cheese or feta to garnish 1. Heat oven to 190c/375F 2. Colour the fennel in a large pan over a medium heat with a little oil on both sides. Turn down the heat, add the butter and season to taste. Recipe Makes 2 portions 2 medium fennel, each cut lengthways into 6-8 wedges, with the herb/ frond finely chopped 700g jar butter beans, not drained 2 shallots, finely chopped 2 cloves garlic, finely chopped 1 tsp fennel seeds 1 tsp picked thyme leaves A good knob of butter A little lemon zest and a good squeeze of juice Olive oil Salt & pepper 1.
