Okay and then I'm gonna add lots of things to give a lot of flavor so a third of a cup of chopped shallots a little thing. We're gonna do is fill this pot with all kinds of good things and then put it in the oven and embrace it. And that's the shallots next is two teaspoons of orange zest and it's actually if you can't, it's great to do it right over the top because then all the oils from the zest get right into the dish. I love the smell of this, so that's two teaspoons of orange zest. Three quarters of a cup of freshly squeezed orange juice third of a cup of olive oil. Next is fresh thyme just right in like that red pepper flakes just to give a little heat. It's a nice balance for the orange two teaspoons of salt, just sprinkle it around half a teaspoon of pepper. Sprinkle it around just gonna turn on the heat. Give it a big stir. I love this kind of cooking because the brazing really gets the flavors right into the vegetables. Brazing is really cooking something in liquid just to keep it moist like roasting. You can really make it ahead and just reheat it before dinner. So at this stage, I'm gonna put the lid on and put it in the oven at 275°, which is a very low temperature for an hour and a half and I have one in the oven to show you and this is the one that's done. Um I wish you could smell it. It's just incredible the orange and the thyme carrots. It's just fantastic two more things to do to finish it off just gonna add a little bit of orange juice at the end cuz it really absorbs the flavor. I'm gonna take out the time. A little bit of salt cuz, of course, everything needs more salt and I've got a nice bowl really simple and let's see if I can lift this pot and pour it out. Look how great that looks. I love it the juices and the carrots and parsnips Okay, and I think it needs a little bit of parsley just kinda brighten it up. Give it a big stir and that is armed braised carrots and parsnips fit for a celebration dinner.
