Healthier Shepard’s Pie Meal Prep Filling: * 1lb lean ground beef * olive oil * 1 tsp minced garlic * 1 bag frozen peas, carrots, and corn * 2 tbsp tomato paste * 3 tbsp Worcestershire sauce * Seasoning: Salt, Pepper, Cayenne, Paprika, Garlic Powder, Onion Powder (Measure with your heart) Mashed Cauli + Potatoes: * 1 head cauliflower * 1 small bag of mini potatoes * 3 tbsp cream cheese * ½ cup shredded cheese *salt, garlic powder, pepper * Optional topping: dried parsley 1. Add cauliflower and mini potatoes to a pot and bring to a boil, cover for about 10 minutes until potatoes and cauliflower are soft to a touch with a fork. 2. While those are cooking in a separate pan add olive oil, minced garlic, and ground beef 3. Cook over medium heat breaking up the ground beef, adding seasonings,

Crockpot Burrito Bowls * 2 large chicken breasts * 1 cup uncooked jasmine rice * 1 cup chicken broth * 1 small can of green chilis * 1 can black beans * 1 bell pepper, diced * 1 can fire roasted corn * 1 can diced tomatoes * 1 packet taco seasoning 1. Add diced tomatoes, chicken broth, chicken, and half a packet of taco seasoning to a large crockpot 2. Cover and cook on low for 3 hours 3. Then add green chilis, drained black beans, drained fire roasted corn, bell pepper, rice and other half of taco seasoning 4. Cover and cook on low for an additional 2-3 hours. Check the rice every hour and stir it to make sure it does not burn. 5. After 2-3 hours remove the chicken and shred it 6.
