Let's make it happen. First things first, we're going to season up our salmon fillets with my AP and Lemon Bay. Make sure you're generous with this stuff guys. It is low sodium so you can be a little bit heavy handed. Season both sides adequately like you see me doing right here. Now if you're one of those crazy folks that don't like the skin on your salmon then I'm sure you're going to let me know in the comments but you can also remove it or just ask your butcher real nicely and they'll usually remove it for you at the counter. Either way once that salmon is perfectly C we're going to warm our skillet over medium high heat to that we're going to add a couple tablespoons of avocado oil because it has a high smoke point and then we're going to lay our salmon in flesh side down first sorry Gordon Ramsay make sure you press down so the salmon is making good surface area contact with the skillet so we get some nice even color like you see right here after a minute or two go ahead and flip the salmon over we're going to finish the salmon in a 400 degree oven for about 15 minutes or until the salmon hits 145 degrees internal temperature now you can keep the salmon in the same skillet or you can place it on a baking sheet and just pop that in the oven. We're going to use the same skillet to make the rest of our sauce though. So, we're going in with some butter, some onions, some sundried tomatoes, tons of flavor in this recipe guys. Now that we got the onions and the sundried tomatoes cooking away in that butter, we're going to let this go for about a minute or two or until the onions start to soften up a bit. It shouldn't take long and your house is going to be smelling absolutely amazing. Now, it's time to go and add in the capers. Get in there with your spatula and give everything a good mix to combine and now it's time to add some garlic to the party. We're going in with about a tablespoon of this garlic paste. You can also use fresh garlic or minced garlic. Just give everything a good mix and now it's time to add in our spinach for health. Now, it's going to look like a little bit too much at first but remember guys, shrinkage is real especially when we're talking about spinach. We're going to fold that in until the spinach wilts down and works its way into the rest of our sauce and now we're going to season things up with my AP, some red pepper flakes for a little heat, a little Smoked Paprika. As always guys, taste as you go and adjust the flavor to your preference. You can always tweak the seasonings to whatever you like. Once you got it right where you want it, it's time to deglaze with some dry white wine because why the hell not? We're here for a good time, not a long time. I'll drink to that. Bring that up to a simmer and allow that wine to cook off a bit. Usually takes about two to three minutes or so. At that point, we're going to add a little bit more seasoning as needed and then we're going to add in our heavy cream. Bring that back up to a simmer and the sauce will begin to thicken up a bit. Once the cream has been incorporated, we're going to reduce the heat down to low and then add in as much parmesan cheese as you want. I'm using about a cup or so here. At this point you want to make any final adjustments to your sauce and then we're going to add in our cooked pasta. You can use whatever noodles you like. I'm going with spaghetti today. Make sure that pasta soaks up all that flavor and then it's time to plate this up. Going down with a little freshly grated parmesan cheese for good measure and now it's time to brace yourself for a trademark money shot. Say it with me guys. Looking good.
