So I've got orzo. I'm just gonna drain it. Perfect. And while it's hot, I'm gonna make the dressing. It's so much easier. I'm just gonna put all the ingredients in the bowl and toss it together. So I'm gonna start with lemon, since I want it to taste really like lemon. The zest is really good. That's the way to do it. Can't do it backwards. So the zest of a lemon. OK, next is lemon juice, freshly squeezed. Lots of salt and pepper. Because orzo itself doesn't have that much flavor, you want to make sure you add lots of flavor. Orzo's Italian, but I'm giving it a little bit of a Greek twist here. And then to finish the vinaigrette, some olive oil. You really want to do this when it's warm because then all those flavors are absorbed into the orzo. Mm. This looks good. So I've got some fresh dill. Just toss that in. Feta-- this is the Greek angle on it. And that's the orzo salad. Pretty simple, right? This is just gorgeous, really fresh. And I think a big squeeze of lemon juice would be great for it. And that's how Italians do comfort food.
