I make my southern inspired peach cornbread muffins. | By Justine Kameron | Alright. So, we just have our canned peaches here. We're going to even these babies out so that there's not too many in one. We want about two to three slices in each of our muffin tin holes. Alright, so now that we have our canned peaches inside our muffin tin, I'm going to go ahead and grab some butter and we are going to put one slice of butter in each of these right on top of our peaches and I pre slice this butter so it'd be super quick. I'm using salted butter but you can use unsalted if you're worried about the sodium. This is going to be a super easy and super delicious summer dessert. Now, when I tell you guys, I really wanted to use fresh peaches but those peaches are way too hard to cut. I cut about, you know, ten peaches and none of them came out good. So, you know, I'm sticking to the good, old, reliable canned peaches for now. After the butter, we're going to grab some brown sugar and I have a little teaspoon here and we're going to add a teaspoon of brown sugar right on top just like this. We're going to make something super delicious. I mean, it's already looking mouthwatering. I mean, peaches and brown sugar. It doesn't get any better than that. Soon as this melts in the oven, it's going to smell so good. Yes and this is all in my silicone mold cup cake tin. I love the silicone because you don't need to grease your pan. You can literally just pop it. It pops right out. Okay, now that we added a teaspoon on each of these, it is almost ready. Go ahead and put these to the side. Grab a bowl and a whisk and we are making a super delicious southern dessert which means we are using our Dolly Partons sweet cornbread. Patty. Dollar Barton really goes out to make an entrance. So, we're using the whole box. I have one third of cup of the melted butter right in there we are going to add one cup of whole milk and this is a two-cup bottle so we're going to use half of this. One egg, right in there and this is optional but I'm going to add a dash of cinnamon. Maybe a couple dashes. That looks good. Oh, that is way more than a cup. So, I love making this cornbread. It's literally just following the recipe on the side of the box with a special add addition of the cinnamon. I love the Dolly Partons 'cuz it's sweet and we are making a sweet dessert. Sweet cornbread is way better than any other cornbread and it's just so easy. Homemade cornbread is so difficult to days but you know, I always tell you guys, you can use fresh peaches, you can use your homemade cornbread, whatever you want. Make it to your liking. I'm doing it my way and then take this as inspiration. Ooh, look how quick and easy that all mixed together. I mean. It's ready. Yes, I think it is ready. Let's go ahead and grab our muffin tin back. Beautiful. Gets our scooper and we're going to go ahead and scoop some of that cornbread right on top of our peaches because this is peach corn muffins. Look at that. I don't know if you've ever had peach corn muffins but they are life changing. Literally the perfect southern dessert. Is this going to be like an upside down cornbread muffins? You know it. Sounds like it's upside down. And that butter and that brown sugar's going to melt and get those peaches nice and caramelized. I am overfilling these because I want big muffins. I was actually about to ask if if you're overfilling them. Yeah. Cuz that butter's going to melt. Those peaches are going to get a little slimy and slip down. So it's all going to be delicious and even. Smells delicious already. So just one scoop of cornbread mixture in each muffin mix and is just a standard ice cream mixture or spoon. You guys knew what I meant. Okay, almost done here. Last row. Did you make enough? Oh, I totally made enough. It's perfect amount. I like 'em like barely. No waste. Oh, look how beautiful those look. Give it a little shimmy. Alright. Now these are ready for the oven. My oven is set to 350 and they're going to cook for about 35 minutes. It's super quick. So fast. Look at these. The peach juice juices got a little bit messy but don't worry they're still going to taste amazing. So we did use that silicone muffin tin. So we're going to go ahead and pop this baby up. Grab it. And then flip it over. Oh my. You cannot tell me that doesn't look delicious. Yeah. Look how easy it pops out. Oh my gosh. Okay. Gotta use two spatulas for this baby. Super moist. Upside down cornbread. One more for good luck. Beautiful. Oh my goodness. Doesn't that look just so juicy and delicious? Let's go ahead and cut into one so you can see that delicious cornbread look perfectly cooked. It looks super moist. Okay. Time to try that. That is incredible you guys. Ugh. Best cornbread ever.
