1 cup olive oil, plus extra for slicking corn
Kosher salt and pepper
1 egg plus 1 egg yolk
2 limes, juiced and zested
1 tablespoon pimentón (or other smoked paprika)
1 cup canola oil
½ large red onion, diced
3 jalapeños, seeded and pith removed, diced
1 cup finely chopped cilantro, plus extra for garnish
¾ cup cotija cheese (or ricotta salata), crumbled, plus extra for garnish
