Quick Prosciutto and Mozzarella Sandwich Ingredients: -bread of choice (I used the Tuscan Garlic Boule from Wegmans) -garlic olive oil (plain olive oil would be just fine as well, I used the basting oil from Wegmans) -1 ball of mozzarella sliced -1 lb. prosciutto thinly sliced -grated Parmesan -3 big handfuls of arugula -1/2 of a shallot thinly sliced Vinaigrette: -1 tsp Dijon -1 tsp honey -1 TBL red wine vinegar -1 TBL garlic olive oil (again I used the Wegmans basting oil but feel free to use plain) -pinch of salt and pepper Cut bread in half and remove some of the extra dough to make room for the sandwich ingredients.
