I love making healthier versions of my favorite foods so I can eat them all the time, and still feel my best. This healthy mac & cheese has 40g of protein in one serving, and is the perfect quick, easy lunch or dinner! Makes 1 serving: ~475 calories, 40g protein, 42g carbs, 18g fat Ingredients: - 1/2 cup high protein pasta (I used @eatbanza elbows) - 5 oz cup of cottage cheese (I used 2% @good_culture) - 1/4 cup whole milk - 1 tsp nutritional yeast (optional but adds a cheesy flavor) - 1/2 tbsp cornstarch or arrowroot starch - Salt + pepper to taste - 1/4 cup shredded cheese (I used white cheddar) How to: - Boil water in a pot then cook pasta
