Tender Cola-Braised Short Ribs with Parmesan Risotto
Ingredients: 4 lbs beef short ribs, 1 can cola, 1 cup beef broth, 1 onion (chopped), 4 garlic cloves (minced), 2 tbsp Worcestershire sauce, 1 tsp paprika, salt and pepper, 1 cup Arborio rice, 4 cups chicken broth, 1 cup grated Parmesan cheese, 1/2 cup heavy cream, fresh parsley (chopped). Instructions: Season short ribs with salt, pepper, and paprika. Sear in a hot skillet until browned. Place in a slow cooker with cola, beef broth, onion, garlic, and Worcestershire sauce. Cook on low for 8 hours. For the risotto, cook Arborio rice in chicken broth until creamy. Stir in Parmesan and cream. Serve short ribs over risotto, garnished with parsley.
