Ingredients

• 1 lb Cross rib roast or another marbled beef
Produce
• 2 bunches 3 cups cut curly or flat leaf parsley, cut
• 1 cup Home cooked pinto beans or canned pinto beans
• 2 Roma tomatoes
• 3 cups Scallions
• 2 Yellow onion, large
Canned Goods
• 2 tbsp Tomato paste
Baking & Spices
• 1/2 tsp Black pepper, ground
• 1 tsp Kosher salt
• 1 tsp Turmeric, powder
Oils & Vinegars
• 5 tbsp Vegetable oil
Liquids
• 4 1/2 cups Water
Other
• 2 cups Cut cilantro (about 1 bunch) stems and all
• 4 Crushed limoo amani (dried lime)
• 4 Whole limoo amani, pierced with the tip of a sharp knife or a fork
