Ingredients

Produce
• 1 qt Cherry tomatoes
• 1/2 cup Chickpeas, cooked
• 6 Cucumbers, small
• 1 clove Garlic
• 2 tsp Oregano, dried
• 1/2 cup Parsley
Refrigerated
• 1 Brick oome greek smoked tofu
Condiments
• 1/4 cup Lemon juice
• 2 tbsp Maple syrup
• 2 tbsp Mustard
• 1/2 cup Olives, pitted & halved
• 3 tbsp Tahini
Pasta & Grains
• 1 cup Quinoa, cooked and cooled
Baking & Spices
• 1 Pepper, yellow
• 1 Salt and pepper
Oils & Vinegars
• 1/4 cup Olive oil
