FROMAGE~ THE FRENCH CHEESE COURSE~ is part of the traditional French meal. Served with salad at the end of the meal, often in place of dessert. It is considered very rude (mal élevée) to take seconds, even though it will be offered. The person serving the meal will present a tray with a variety of cheese. You tell them which one you want, never more than three, please, and they are placed on your plate.
