After making smoked chimichurri, I had to try smoking butter. I'm going to bacon wrap some fillets and then mix together all the ingredients for a spicy cowboy butter. Grab a smoldering coal from the fire and add that to the butter and then cover to encapsulate that flavor. Grill up the fillets making sure to get a nice crust on them. Once they're 120 internal, pull them off and let them rest and then we're going to cook up some lobster meat covering in your favorite seafood. Pull that off and then pop open that smoked butter. Pull out the coal Add that lobster meat on top of your fillets and drizzle the smoked butter all over your dinner. This smoked butter can go with everything.
