Instructions: Preheat the Oven: Preheat your oven to 375°F (190°C). Sauté the Spinach: In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until the onion is translucent. Add the chopped spinach and cook until wilted. Remove from heat and let cool slightly. Prepare the Filling: In a bowl, combine the sautéed spinach mixture, ricotta cheese, feta cheese, grated Parmesan cheese, and the beaten egg. Season with salt and pepper to taste. Assemble the Pie: Roll out the puff pastry or pie crust on a floured surface. Place one sheet in a pie dish, leaving the edges hanging over. Spoon the spinach filling into the crust. Fold the overhanging edges over the filling, or place another sheet of pastry on top and seal the edges.
