This is how I do it. Jam up bacon jam on top. Now, for my smoked cream cheese dip, you gotta have two blocks. Eight ounces ain't enough. I got a little bit of slightly warm bacon grease. You know that's going to make it taste good. Season up that bottom side and the sides. Use your favorite rub. Y'all know I got the barbecue rub. Little more bacon grease for the top. Same thing to block number two. Let's put this cream cheese on the pit. We're going to go $275 about an hour and a half. Let me tell you about this jam up bacon jam. I browned up some bacon, took it out, drained it on paper towels, thinly sliced onion back in the bacon grease, brown sugar, balsamic vinegar, sweated it down, combined it all together, and it makes an unbelievable topping. That's what's going on top of our smoked cream cheese. You can put as little or you can put as lot as you want. I'm putting the whole thing. Spread it around but we're not done.
