Ingredients: - 4 cups of room temperature unsalted butter (8 sticks) - 11 cups powdered sugar (3.6 lbs) - pinch of fine salt - 1 tsp vanilla extract - 1/2 cup heavy cream Directions: - Add all of the room temperature butter to the bowl of your stand mixer and mix on medium speed for 5-8 minutes using the paddle attachment. Make sure the butter is pale in color before adding any other ingredients! - Add half of the powdered sugar, half of the heavy cream, all of the vanilla, and a tiny pinch of salt to the mixer. Mix on low until the powdered sugar is incorporated. - Add in the remaining powdered sugar and heavy cream. - Begin to mix on low speed until the sugar is incorporated and then increase the speed to medium. - Let the mixer go for about 1 minute and then use a rubber spatula to scrape the sides and bottom of the bowl to ensure that everything is mixed in well. - After you scrape the bowl down, continue mixing on medium speed for 8-10 minutes or until the buttercream is very smooth (don’t stop the mixer and scrape the bowl down too many times during this step!! The more you open the mixer, the more air bubbles get into the buttercream and it will not be as smooth). - Once the buttercream is smooth, stop the mixer and fill your piping bags for your cupcakes or your cake (this recipe works for both) and enjoy! Note: The reason I always make a double-batch of this buttercream is because it fills my stand mixer bowl to the top! This helps to keep air bubbles out of the buttercream because there isn’t room for air to get in when the bowl is so full. I have found that if I cut the recipe in half, it doesn’t turn out nearly as smooth. Caramel Apples 2 cup brown sugar 1/2 cup butter 1 cup corn syrup 1/2 cup heavy whipping cream Pinch of salt 1 teaspoon vanilla 7-8 preferably Granny Smith apples medium In a medium pot add in all the ingredients but the vanilla. Put it on medium heat and allow the mix until the butter has melted. From right here do not mix anymore you can actually scrape off the sides but do not mix the pot at all. For about 8 to 10 minutes you’ll notice it start to boil if you can use a digital thermometer that’s even better. You want us to hit 235 to 240 Fahrenheit. Once it’s reached the temperature remove from the heat and add the vanilla. Allow to cool down to about 180°. Wash and clean your apples down amd dry them. Place to stick on one end and go ahead and dip. If the caramel is still too soft go ahead and dip and place in the fridge and then dip again. The caramel work best the next day.
