This healthy lemon orzo salad is the perfect cold pasta salad recipe for summer.

Ingredients: 2 medium cucumbers, thinly sliced 2 medium beets, boiled, peeled, and thinly sliced ¼ red onion, thinly sliced 2 tbsp fresh dill, chopped 3 tbsp olive oil 1 tbsp apple cider vinegar 1 tbsp fresh lemon juice 1 tsp honey (optional) Salt and pepper to taste Feta cheese or goat cheese crumbles (optional, for topping) Instructions: Prepare the Beets: Boil beets in salted water for 20–30 minutes until tender. Let cool, peel, and slice into thin rounds. Assemble the Salad: In a large salad bowl, layer cucumbers, beets, and red onion slices. Sprinkle with fresh dill. Make the Dressing: In a small bowl, whisk together olive oil, apple cider vinegar, lemon juice, honey, salt, and pepper. Combine: Drizzle the dressing over the salad and toss gently to combine. Serve:
