It’s the perfect blend to keep it juicy and let the fat render out during the cook to help get that beautiful crust! 80/20 works as well, but it’s slightly worse than this blend for smashburgers. 2. When you form the 3-4 oz smashburger balls, don’t overwork the beef or handle it too much. You want it to really spread out when smashing and this helps get that amazing texture that Smashburger are known for! Just loosely form it with your hands and your done! 3. Thinly slice 1x onion and caramelise with some olive oil + butter on med heat for 30 mins with sea salt, black pepp, Itsp sugar 4. Then add in a splash of Worcester sauce + a drizzle of balsamic glaze and cook for further 3-5 mins 5. Lace a pan/ griddle with neutral oil and place down a few strips of smoked streaky bacon - cook on med heat till crispy and remove 6. Increase the heat of the pan and once gently smoking, lace with a little more oil then place down your meatballs 1-2 at a time 7. Smash down, then season with sea salt + black pepp and flip after 1.5 mins - you want a nicely caramelised patty 8. Once flipped, add your American cheese
