A Simple Woman's Daybook
I am thinking...that I will include more photos in my Daybook in future, as I'm always taking photos and it seems a shame not to share them.
Here for instance are my Easter bunnies and the tulip arrangement I made. The tulips are looking a little sorry for themselves now but they were really stunning when the tulips started to open...like golden cups of sunshine! Unfortunately they'll probably be evicted tomorrow...but then I can play once more with some more flowers and greenery.
(I'm just a little concerned about mummy bunny having no eyes! I can't help wondering why?)
I am going...away at the weekend for one of our trips...so just pack a small travel bag. It's only for a long weekend but I did say I'll take you along. I won't say where just yet...oh I do like to keep you all in suspense don't I?

Connie has fought cancer three times in her life and Samuel has been with her every step of the way. This time things are different. Connie is dying and she doesn’t have much time left.
Faced with the fight of her life, she set Samuel the toughest challenge she could think of. It started as a joke in the kitchen. It turned into a promise.
The goal? To set a new Guinness World Record for the most distance travelled on a unicycle, raise $1 million and spread Connie’s message of breast cancer awareness.
Samuel has consulted all the experts, taken none of their advice and he’s setting off on the challenge of a lifetime. He made a promise and is determined to keep it!
Samuel left Melbourne on Friday February 15 and is out there as I type.
Mufftypup is with me every day...she's like my shadow. I know her so well and she knows me. But of course she can manipulate me very easily with a look or the quiet way she gruffs to make a point (which by the way can drive you insane if you try to ignore it...it's impossible) She makes me walk out the door every morning no matter what, even when I don't feel like it but once I'm walking it's such a special time.
She's had quite a life so far with being an expat and has even flown half way around the world....probably business class knowing her! She's only 9 years old but I have moments when I wonder just how will manage when she has to leave us. She's the cutest, cuddliest, fun loving, playful, funny pup I've ever known but then I may be a tad biased.
We had a beautiful meal in one of the many fabulous restaurants to choose from and enjoyed one of the last (possibly) warm evenings. Two Black swans were out enjoying the evening too.

Happy Easter to you all....
I'm hardly having the usual Easter weekend this year, with it being my son's birthday, house-hunting, and Anzac Day Celebrations all rolling into one.
I did want to bake Hot-cross buns (which would have been a first), but I never got round to it unfortunately. I did however, bake my son's favourite 'Chocolate and Vanilla Cake' as per his request http://neesienatters.blogspot.com/2011/03/chocolate-and-vanilla-marble-cake.html
He's not actually had a bite so far due to having partying a little to enthusiastically with his pals!
On a completely different tangent, here's a guest that just popped onto the decking to enjoy the beautiful sunshine this afternoon. It certainly looks like a Praying Mantis but correct me please if I'm wrong....

Chocolate and Cognac Cake
This cake rises like a souffle, since that's really what it is....
Remember the quality of chocolate you use is directly proportional to the quality of the cake. The rule also applies to cognac.
Recipe below....
I have to admit I didn't do the test of placing the stiffened egg white bowl over my head, as with many cooking demonstrations, to prove the whites are whisked enough.
I've never had the nerve to try that.
The smell at this stage was unbelievable... I placed a little crème fraiche to accompany the lovely chocolate gooeyness
Chocolate and Cognac Cake - serves 8 (or 12, or 1 depending on your willpower and willingness to share!)
400g good-quality dark chocolate
6 eggs, separated
150g caster sugar
100ml good-quality cognac
300ml pure cream
cocoa powder or icing sugar, to serve
Preheat the oven to 175C. Cut a piece of greaseproof paper to fit a 20cm round cake tin, with a double layer for the side and a single layer for the base. Spray the tin with cooking oil and fit the greaseproof paper snugly.
Melt the chocolate in a stainless-steel bowl set over a saucepan of hot water. Don't let the water boil, as you can scald the chocolate. Remove the chocolate from the heat and let it return to room temperature.
In a large bowl, beat the egg yolks and 100g sugar until pale and creamy. Add the cognac and continue to beat until well combined. Add the chocolate and stir until completely incorporated, then slowly stir in half the cream. Set aside.
Whip the remaining cream until soft peaks form. Set aside. Whisk the egg whites in a very clean bowl. When soft peaks form, slowly add the remaining sugar and whip until very firm. Fold the whipped cream into the chocolate mixture. Fold in the egg whites.
Pour the cake mixture into the prepared cake tin, place the tin in a baking tray and add enough hot water to come 2.5 cm up the side of the tin. Bake for 45 minutes.
Turn down the oven to 150C and bake for a further 45 minutes. Turn the oven off and leave the cake in the oven for 40 minutes, then remove to a cake rack. Cut around the edge of the tin and turn it onto a plate - the cake should slide out easily. Sprinkle with cocoa powder or icing sugar. To slice the cake, use a knife dipped in hot water and clean the knife after each cut.
This cake will last for three days (if your lucky) covered, outside the fridge. Don't refrigerate it: it will set like a brick!
