Almond Chocolate Cherry Cookies



I am well aware that I have 80 cookie recipes on my blog--all excellent. But I think I have a New Favorite Cookie! I saw a recipe for an almond chocolate cookie in the new Taste of Home Fall Baking magazine. I was sure it would be yummy as it had so many fun flavors. I had just purchased some Almond Flavoring from Penzeys. I have been ordering spices from Penzeys for several years, they are fresh and delicious. When a Penzey's store opened just 10 miles from home I was thrilled. Girls weekend included a field trip to Penzeys. I entered the store and felt like I had died and gone to heaven. Heaven will smell like a Penzeys store I am sure.
Anyway--back to these amazing cookies. Chocolate, white chocolate, chopped almonds, almond flavoring--these had to be excellent. I'm sure the recipe in the magazine is good, but I made it better. What goes perfect with almonds and chocolate? Dried cherries do. They added the perfect contrast of sweet/sour. Please add this to your holiday cookie platter.

Almond Chocolate Cherry Cookies (aka favorite cookie)
1 cup softened butter
3/4 cup brown sugar (150 grams--I always weigh brown sugar)
1/2 cup sugar
1 egg
1 teaspoon almond extract--use Penzeys
2 cups flour
1/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup white chocolate chips
3/4 cup almonds, roughly chopped
3/4 cup dried cherries, roughly chopped
Cream butter and sugars together till light and fluffy. Beat in egg and extract. Combine flour, cocoa, baking soda and salt. Gradually add to creamed mixture, don't over mix. Stir in chocolate, nuts and cherries.
Using a medium size scoop drop dough on a parchment lined baking sheet. Bake at 375 for 11-13 minutes. Cool on racks. Makes about 2 1/2 dozen cookies.

Singapore Chicken Salad



What is a Singapore Chicken Salad anyway??
I started with one of my favorite Asian Chicken Salads, made popular by my daughter Amber. This same sweet daughter introduced me to the wonderful world of Penzys Spices. They are fresh and have some of the most amazing seasoning blends. Actually in the near future I will do a post about some of my most used Penzys Spices.

Back to the 'Singapore Chicken Salad'. I purchased a small jar of Singapore seasoning. I knew it would be awesome because it contains some of my favorite spices--pepper, garlic, onion, coriander, cumin, ginger, fenugreek, nutmeg, cardamom etc. It worked miracles with the ever popular chicken tenders. These seasoned tenders added a wonderful flavor to a weeknight salad.
The homemade dressing makes up in just a minute from ingredients that are pantry essentials.
This salad is a little different each time I make it--depending upon what is in the fridge.
Have fun with this tasty salad!

Singapore Chicken Salad
I use Costco Chicken Tenders, 8 tenders fit well in my skillet and is enough for 2-3 servings. Thaw tenders, rinse and pat dry. Generously sprinkle chicken with Penzys Singapore Seasoning. Cook in a small amount of hot of hot oil for about 4 minutes per side or 165 degrees. Dice cooked chicken
Salad
Any mix of crisp veggies works.  I like Dole's Chopped! Asian Blend which contains green cabbage, red cabbage, broccoli slaw, carrots, kale and snap peas. There are so many fun salad blends available--it makes eating salad much easier. This hearty blend will also last a bit longer in the fridge than spring greens. Am I the only one that forgets what is in the fridge??
I might also add--
chopped romaine
Napa cabbage
diced cucumber
diced red pepper
green onions
bean sprouts
cilantro (a must)
orange sections
chopped peanuts or almonds
Won Ton Strips

Dressing
1/4 cup sesame oil
1/4 cup rice vinegar
1/4 cup sugar
1/4 cup vegetable oil
2 teaspoons salt
1/4 teaspoon pepper
Mix together--this dressing keeps for several days

Asian Chop Salad


I am happy with the variety of 'chop' salad kits at the market. I do purchase them occasionally and if fresh they can make a delicious salad. I wanted to see if I could come up with a 'better' chop salad. I think you will agree that this is one excellent salad. This salad is full of texture and flavor. The dressing is light with just a little sweetness. Combine the salad and dressing for a perfect dish.

Asian Chop Salad
1 bag coleslaw mix (14-ounce)
Chopped:
Napa Cabbage
celery
cucumber
red pepper
green onion or red onion
bean sprouts
sugar snap peas
1 tablespoons toasted sesame seeds
1/3 cup slivered almonds
Mix coleslaw and veggies in a large bowl, toss with dressing at least 30 minutes before serving. The dressing will draw some moisture out of the veggies, this really is enough dressing. Just before serving top with sesame seeds and almonds.

Dressing
2 tablespoons canola oil
2 tablespoons cider vinegar
1/4 cup rice wine vinegar
2 tablespoons sugar
1 teaspoon salt
2 teaspoons soy sauce
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 teaspoon sesame oil
Combine all ingredients and shake or stir vigorously. Refrigerate until ready to use. This dressing can be made several days before serving.

You can use finely sliced cabbage and grated carrots instead of coleslaw mix.
Use whatever veggies you have. I like this salad because most of the ingredients keep well in the fridge. Cabbage, carrots, celery, onions have a long life span. This salad is excellent with just these!
Napa Cabbage keeps quite a while in the refrigerator, it adds a delicious flavor and a 'softer' crunch. Fresh bean sprouts have a short shelf life--but are delicious if you have them.
I didn't put amounts in this salad--use more of what you love!
I found this recipe in an Our Best Bites cookbook, I made a few changes to make it more to my liking.

Almond Poppy Seed Muffins




I have never really been a breakfast person. I like a glass of juice and a piece of toast.
But I do like Brunch. A meal served at 10, when one is fully awake and moving is my kind of meal. There are so many available options for brunch. A light brunch may just be juice, muffins and a fruit tray. When my sons are in town if I mention the word, 'brunch' I better have bacon, sausage links and sliced ham. Other great brunch choices are Sunshine CasseroleDenver Omelet, Breakfast Pizza or a breakfast burrito. These also are great for dinner.
Now back to the blog post--I'm talking the most delicious Almond Poppy Seed Muffins, these gems are chuck full of flavor and texture.
I found this delicious recipe on Life Made Simple.

Almond Poppy Seed Muffins
1 cup flour
1/2 cup cake flour--to make cake flour put 1 tablespoon of cornstarch in a half cup measure, fill with all purpose flour
1 cup sugar
9 tablespoons butter--softened
2 eggs
3/4 cup sour cream
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon vanilla
2 teaspoons almond extract
2 tablespoons poppy seeds
slivered or sliced almonds for the top
Sift together flour, cake flour, baking soda, baking powder and salt three times. Set aside. Yes, I really did this. Beat the butter and sugar for 2 minutes. Add eggs one at a time and beat well. Add extracts and poppy seeds. Add the flour alternating with the sour cream. Mix gently.
Either spray muffin pan with Pam or put in cupcake liners. I found some darling liners at Gygi's. Using a large scoop fill muffin cups 2/3 full. Do not overfill. Sprinkle almonds on top of batter. This recipe made 12 regular size muffins and 12 mini muffins. Bake at 375. 20-23 for regular size muffins, 10-12 minutes for mini muffins. Toothpick should come out clean. Don't over bake.

Chicken Enchilada Rice Bowl--Gluten Free



This yummy dish happened as a result of leftovers. Sometimes the best meals happen as I clean out the fridge! I had some Cilantro Lime Rice (I made a 5 cup batch--that's 5 cups of dry rice for a party at our church. My rice wasn't used so I had a fridge full. That is after giving some away) in the fridge, a few sliced olives and some cooked chicken seasoned with Penzys Fajita Seasoning. I drizzled some homemade enchilada sauce over all. A little cilantro, shredded cheese, diced tomato, sliced almonds and sour cream finished the bowl. It was delicious and perfect for the gluten free eater. Diced avocados would also be a great addition. We completed the meal with Chips and Salsa from Los Hermonos--a favorite local Mexican restaurant. Perfect meal for Cinco de Mayo!

Chicken Enchilada Rice Bowl
Cilantro Lime Rice--or plain rice
Cooked chicken, I like Penzy's Fajita Seasoning
Shredded cheese
Sliced olives
Sliced almonds
Diced tomatoes
Chopped cilantro
Diced avocado
Sour cream
Enchilada sauce, I used this Homemade Recipe, canned would work
Lime wedges
Put rice on a plate. Top with your favorite toppings. Whatever you use--I think it will be delicious!

Chicken Enchiladas


I have had this recipe for over 30 years my sweet friend Mary Ann shared it with me. If a recipe came from Mary Ann you knew it would be a winner. It was delicious then and is delicious now! I'm sorry it has taken me so long to post it! I have cut the recipe down to feed a smaller family.
This is so easy to make, I had everything in the fridge/pantry to put it together. I quickly cooked some chicken tenders--about 6. The sauce is a simple homemade enchilada sauce.
If you really wanted to make this simple use rotisserie chicken, a can of enchilada sauce, a can of sliced olives and pre-shredded cheese. Dinner doesn't get much easier. And tasty!

Chicken Enchiladas
Sauce:
1 can chicken broth
2 tablespoons chili powder
1/8 teaspoon garli powder
1/8 teaspoon cumin
salt and pepper
Mix ingredient together and bring to a simmer. Add 1 tablespoon cornstarch that has been dissolved in 2 tablespoons water. Boil for 1 minute.
Filling:
1 diced canned green chili--or 1/2 of a small can of diced chilis
1 1/2 cups shredded cooked chicken
3/8 cup sliced olives
3/8 cup sliced almonds
3/8 cup shredded cheese, jack or cheddar
1/4 cup sauce
Mix together
6 flour tortillas--roll tortillas in damp paper towels and microwave for about 15-30 seconds till soft and warm. Fill with a heaping 1/4 cup filling and place in a greased 8 inch square pan. Double wrap with foil and bake a 350 for 20 minutes. Garnish with sauce, sour cream, cheese, avocado, tomatoes, salsa etc. Serve with Cilantro Lime Rice for a delicious meal!

Hawaiian Haystacks


Hawaiian Haystacks is a classic! This dish feeds a crowd, it is easy to customize--even the pickiest eater will find something here to like. I have been making it for years, the gravy is usually a can of Cream of Chicken soup, broth, milk and maybe some sour cream. Not bad and very easy. But in my quest to feed my family less processed food I have been looking for a 'from scratch' recipe. Mel's Kitchen Cafe to the rescue. Her recipe is easy and delicious, I have no desire to reinvent the wheel so I happily tried her version. 
This recipe will make the perfect Sunday Dinner when I invite the Grandmas and kids. Everyone can bring a topping and we will all live happily ever after! I do like a good ending.
 

Hawaiian Haystacks
2 chicken breasts, cut into bite-sized chunks
3 Tbsp Butter
1/2 cup finely chopped onion
3 cloves garlic, minced
1 tsp salt
1/2 tsp pepper
1/4 cup flour
2 cups milk
1 cup chicken broth

In a large skillet over medium heat melt the butter and add the chicken and onions.  Cook until the onions are translucent and the chicken is cooked through, 5-6 minutes. Add the garlic and cook, stirring, for one minute.

Sprinkle the flour over the onions, chicken, and garlic and stir to combine.  Cook for one minute. Slowly whisk in the milk and chicken broth.  Cook, stirring constantly, and bring the sauce to a simmer.  Add the salt and pepper.  Continue simmering, stirring frequently, until the sauce has thickened, 5-8 minutes.

Serve over rice with your choice of toppings.  Some of our favorites are celery, tomatoes, olives, pineapple, mandarin oranges, peas, green onions, cheddar cheese, crunchy noodles, and slivered almonds.

Sugared Almonds--A 'How To' Post


Sugared Nuts
See the progression of the sugared almonds. 1 cup nuts to 1/4 cup sugar. Start on medium heat, stir often--like don't leave the stove. This is not the time to multi-task. Try it and you just might end up with burnt almonds, I know! When the sugar melts the almonds brown quickly--stir continually. They are easy to burn. Pull them off the heat at the desired brownness. Pour on a large dinner plate that has been sprayed with Pam.
Cool and break up if desired. Serve on any salad--especially good on Strawberry Spinach Salad. I buy bulk sliced or slivered almonds at Sprouts or Winco. Costco also had sliced almonds. Sugared pecans also work, same measurements. You could also chop the pecans first. Whole sugared nuts are great snacks.

My Favorite Granola


I am a granola junkie. I love granola--for breakfast, for snacks for gifts. What's not to love about granola? I have several granola recipes on my blog and they are all delicious. Try any one of them and you will be happy. So why a new recipe?? Because it is the best! It is a pretty ordinary recipe with a few crucial differences. First use whole almonds and just rough chop them. I use my Pampered Chef Food Chopper, a few chops and you have an assortment of almond pieces. This adds a great texture. The next big difference is the way the granola is cooked. Spread it on a large rimmed cookie sheet and press it down with a large metal spatula. Use some pressure. Bake it--and Do Not stir it. When the granola is cool you can break it in chunks. This granola is crisp and light. It is delicious. It is a recipe from America's Test Kitchen. It is my new favorite granola!

My Favorite Granola
5 cups Old Fashioned Oats
2 cups Almonds, chopped coarse
4 teaspoons Vanilla
1/2 teaspoon Salt
1/3 cup Maple Syrup
1/3 cup Brown Sugar
1/2 cup Vegetable Oil
1 cup Dried Fruit--if desired
In a large bowl whisk together salt, sugar, syrup and vanilla. Add oil and mix well. Add oats and chopped almonds, mix until thoroughly coated. Transfer mixture to a large rimmed baking sheet lined with parchment paper. Using a large stiff metal spatula press mixture into pan until compact.
Bake in a 325 degree oven for about 35-40 minutes until light brown, rotating pan once half way through baking.
Cool on a wire rack for at least 1 hour. Break granola into pieces of desired size. Add dried fruit if desired.
Granola can be stored in an airtight container for 2 weeks.

Coconut Oil Granola


I purchased a tub of Coconut Oil at Costco and have enjoyed finding recipes that include it. So far I have been very happy with this new find! I Googled, 'granola using coconut oil', several recipes appeared. Google is great. I read over many recipes and this was what I came up with. I love making granola--I have several recipes on my blog--all delicious I might add. Here is another granola recipe to add to the group! It is yummy.


Coconut Oil Granola
4 cups oats
3/4 cup sliced almonds
3/4 cup walnuts, coarsely chopped
1 cup unsweetened coconut curls
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon cardamom
1/2 cup coconut oil
1/4 cup honey
1/4 cup brown sugar
1 tablespoon maple syrup
1 tablespoon vanilla
Mix oats, nuts coconut, salt, cinnamon and cardamom in a large bowl. In a small saucepan melt coconut oil, brown sugar, honey, maple syrup and vanilla. Pour over oat mixture and stir. Pour on a sheet pan and bake at 325 for about 25 minutes. Stir often. Cook granola until desired crispness. Granola will continue to get crisp as it cools. Be careful--it is easy to overcook! Enjoy with yogurt, fruit or milk.I just had some of this granola sprinkled on a bowl of vanilla ice cream--it is delicious, I know!

Coconut Macaroons--Gluten Free


I have mentioned this before, but my daughters and I love to share recipes.  It isn't uncommon for several of us to make the same recipe in any give week.  We don't share time zones but we enjoy sharing recipes! Amber made this recipe and e-mailed Candise and said this was a must make--it is gluten free and delicious.
I made it for Lynne my sister-in-law who loves all things coconut. It was a hit! This recipe proves that you can bake delicious and gluten free! Thanks A Dash of Sass for a great recipe.

Coconut Macaroons
3 cups sweetened flaked coconut
1 cup slivered almonds
2/3 cup sweetened condensed milk
1 teaspoon vanilla
2 egg whites
pinch salt
chocolate
Toast coconut and almonds on a sheet pan at 350 for about 12 minutes until lightly toasted. Watch carefully, coconut goes from golden to burnt in seconds (how would I know that??) Cool.
Combine sweetened condensed milk and vanilla, stir in coconut and almonds.
In an electric mixer beat egg whites and salt till stiff but not dry. Gently fold egg whites into coconut mixture. Using a cookie scoop that has been sprayed with Pam scoop batter onto a parchment lined cookie sheet that has been sprayed with Pam.
Bake at 350 for about 14 minutes or until edges of cookies are light golden brown. Cool on cookie sheet. 
When cool dip bottom of cookie into melted chocolate, place on parchment paper. Drizzle top of cookie with melted chocolate. I used dark chocolate but milk or white would also be delicious. This cookie tastes just like an Almond Joy (only better), leave out the almonds and you have a Mounds bar. These cookies were a hit. I will make them again!

Olive Oil Granola



I have tried many granola recipes--you will find several on my blog--all delicious. But I had not tried granola that contained olive oil so of course I had to. Now I have another granola recipe that I love. This granola has plenty of sweetness: honey, pure maple syrup and brown sugar. It is flavored with cinnamon and cardamom, nuts and dried fruit round out the list of ingredients.
This granola stayed in chunks (maybe because of the egg white?) which I like--it is much easier to snack on. You also add the dried fruit before you cook it so the fruit is stuck to the yummy chunks of goodness. I liked it and will certainly make it again. I found it while looking at quilt blogs. It was a fun surprise in the middle of beautiful quilts!


Olive Oil Granola
4 1/2 cups old fashioned oats
1/2 cup extra virgin olive oil
1/2 cup brown sugar
1/4 cup honey
3/4 cup pure maple syrup
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon cardamom
2 cups nuts/seeds (I used raw cashews and slivered almonds)
3/4 cup dried fruit (I used King Arthur Flour's Fruit Cake Blend--best dried fruit on the planet)
1 egg white
Mix all ingredients except egg white in a large bowl stir until all the sweetness is incorporated. Whisk egg white and add to mixture, stir. Pour mixture on a sheet pan that is covered with parchment paper.
Bake at 325 for about 45-50 minutes, stir every 15 minutes. It will firm as it cools.
Serve on plain Greek Yogurt with fresh berries. It also makes a yummy snack.

Great American Brownie Pie


Brownies are one of my favorite food groups. I like cakey, chewy, with nuts, without nuts, frosted and unfrosted. So what makes this brownie recipe stand out? It has to be the addition of almond extract, almonds, maraschino cherries and white chocolate chips. Its fun pie shape was unusual and made a fun presentation. This made a delicious Sunday Dessert--everyone loved it. I'm happy to add it to my list of yummy brownie recipes!

Great American Brownie Pie
1/2 cup butter softened
3/4 cup sugar
2 eggs
2 tablespoons corn syrup
1 1/2 teaspoon almond extract
2/3 cup flour
1/3 cup cocoa
1/4 teaspoon baking powder
1/3 cup chopped maraschino cherries
1/3 cup sliced almonds
1 cup white chocolate chips (I used mini white chips)

Cream butter and sugar, add eggs, corn syrup and almond extract. Mix well. Combine flour, cocoa and baking powder, whisk to combine. Add to creamed mixture and stir gently. Drain chopped cherries on paper towels. Fold the cherries, almonds and chips into batter.
Spread mixture in a deep dish 9 inch pie plate that has been sprayed with Pam for Baking. Bake at 325 until a toothpick comes out clean--about 35-40 minutes. Cool. Serve with whipped cream or vanilla ice cream, garnish with cherries and almond slices.

Pink Salad


This salad has been a family favorite for years.  It was first brought to Grandma's 80th birthday party by a dear friend, Jillian.  Since then the recipe has been passed around the extended family.  It resurfaced recently and we have enjoyed it all over again!  It was the perfect salad for my daughter to take to a gathering with some of her friends today, and there was enough for my husband and I to enjoy for lunch too!
It is one delicious salad. Perfect for any gathering.

Pink Salad 
Romaine Lettuce
Red Leaf Lettuce
Cooked Bacon--about 6 slices, diced
Mozzarella or Jack Cheese, 1/4 inch dice
Dried Cherry and Berries Mix
Sugared Almonds--1 cup sliced almonds, 1/4 cup sugar. Heat in a non-stick pan over low heat till sugar is dissolved and almonds are a light brown. Keep a close eye on this--they are easy to burn.
Diced Cooked Chicken--if you want this to be a main dish salad.
Pink Dressing
1/8 of a Red Onion (yes this is enough)
1/4 cup Red Wine Vinegar
1/2 cup Sugar
1/2 teaspoon Dried Mustard
3/4 teaspoon Salt
1/2 cup Oil
Using a immersion blender or food processor blend onion, vinegar, sugar, salt and dried mustard. Slowly add oil and blend until you have a beautiful thick, creamy, smooth pink dressing.
Mix together all salad ingredients, dress salad just before serving.

Almond Joy Meets a Peanut Butter Cup

This delicious confection is exactly what the title says. Two favorite candy bars wrapped into one awesome dessert. And it's easy. Amber needed a quick treat for a baby shower. She had everything in the house to make these, it was a done deal--done delicious I might add. The top layer is chocolate and peanut butter heaven. The base is full on coconut and almonds. It's perfect.

 Almond Joy Meets a Peanut Butter Cup


1/2 cup butter
1 1/2 cups graham cracker crumbs
1 (7-ounce) package flaked coconut
1 (14-ounce) can sweetened condensed milk
3/4 cup slivered almonds
1 1/2 cups chocolate chips
1/2 cup creamy peanut butter
Preheat oven to 350 degrees. Put butter in a 9x13 baking pan, melt in oven. Sprinkle graham cracker crumbs evenly over melted butter.
Top with coconut, almonds & drizzle sweetened condensed milk evenly over
all. Bake 25 minutes or until light brown.
In small saucepan over low heat melt
chocolate chips and peanut butter.
Spread evenly over hot bars.
Cool 30 minutes then chill thoroughly.

Autumn Granola



I have 6 granola recipes on my blog, do I really need one more? Yes I do. This beautiful granola gets it's fall colors from some delicious dried fruit that I purchase from King Arthur Flour. It is their Fruitcake Blend but  don't let the word fruitcake scare you. This is my favorite blend of dried fruit because the pieces are small but the flavor isn't. It contains dried pineapple, golden raisins, apricots, cranberries and dates. Beautiful little bites of fall. I made two batches, one for me and one to share. Who doesn't like a bag of homemade granola.

Autumn Granola---inspired by Cooking For Seven

4 cups oatmeal
1 cup coconut
1 1/2 cup nuts (I used walnuts but use what you love)
1/4 teaspoon salt
4 ounces butter (melted)
1/4 cup pure maple syrup
1/4 cup honey
1 tablespoon pure vanilla
1 cup dried fruit
Mix oatmeal, coconut, nuts and salt in a large bowl. Melt butter, add syrup, honey and vanilla. Pour over oat mixture and stir well. Spread on a sheet pan. Bake at 300 degrees for 30-40 minutes. Stir often. When granola is cool add dried fruit.

Nectarine Upside-down Chiffon Cake--TWD BWJ



We celebrated Hubby's birthday late--a month late to be exact. That's what happens when a birthday falls just days before a child's wedding. Normally I would just make a chocolate bundt cake or something tried and true. Thanks to this wonderful baking group I had the challenge to make something new and different.
I read the recipe thru several times--it does need a little thought and planning.


But can I just say for the record that this Nectarine Upside-down Chiffon Cake was absolutely delicious. It was like nothing I've ever tasted (maybe I should get out more)! The nectarines and brown sugar made a beautiful topping. The Chiffon Cake part  was light and delicious. The streusel was good but if I made the recipe again I would leave it out so I could just enjoy the cake. The baked streusel was tasty and I see many uses for it. Like atop blueberry muffins or on top of fresh peach ice cream. I really don't lack in the dessert department!

All in all I'm glad I made this recipe, glad I tried something slightly out of my comfort zone. Very happy to have a well written cookbook that walks me right thru a dessert such as this. We were all happy to have a delicious late birthday cake!

Jill's Asian Chicken Salad



I've mention before that I have daughters that can cook. I've made Amber's Asian Salad many times it's always delicious. Jill put her own spin on another Asian Salad, it just might remind you of Aplebee's Asian Chicken Salad.  It has a creamy dressing  and plenty of crunchy additions. We purchased some Panko Breaded Chicken Tenders from Costco. These surprised me and were delicious. So this recipe is mostly just suggestions. It is different every time we make it. Just depends what's in the fridge that day. The creamy dressing and crispy wontons really make it. It is a perfect headed into spring salad.



 Jill's Asian Chicken Salad
Chopped romaine
Diced red peppers
Chopped celery
Sliced cucumber
Broccoli Slaw or Cole slaw mix
Mandarin oranges
Cooked sliced chicken--grilled or breaded
Sliced almonds
Crispy wontons, purchased or homemade

Creamy Asian Dressing
2 tablespoons honey
1/4 cup mayonnaise
1/8 teaspoon sesame oil
1 1/2 tablespoons rice vinegar
1 teaspoon Dijon mustard
Mix well and drizzle over salad

TWD/BWJ Rugelach



Can I just tell you how proud I am! When I first looked at Rugelach I decided it would be the recipe of the month I would skip. I knew Irish Soda Bread would be no challenge. But if this baking group is to be about challenge and putting myself outside my comfort zone I better make Rugelach.
The reason I make so many cookies is the instant gratification factor. Rugelach contains no part of instant!
But I did enjoy the process once I realized it was just that a process.
I made cream cheese pastry.
I chilled.
I chopped nuts.
I toasted nuts.
I chopped fruit.
I plumped fruit.
I made prune lekvar (I didn't even know there was such a thing as prune lekvar).
I made brown sugar mixture.
I made nut topping.
I rolled pastry out.
I filled pastry.
I rolled pastry.
I chilled rolls.
I egg washed.
I sliced.
I rolled slices in nut mixture.
I baked.
I ate, and ate and ate. They were delicious!


I kind of feel like Melinda Mae in the poem by Shel Silverstein.
