Penne with Chicken in Cream Cheese Sauce

My son declared that he don't like cream cheese and this is one way I found to make him eat some left over cream cheese. Cream cheese, milk and parmesan cheese formed a great sauce for pasta. Fried chicken pieces, red bell pepper and green olives blended in well with the sauce.

Baked Penne with Chicken and Sun-Dried Tomatoes

This was our Valentine's day dinner with creamy strawberry crepe as dessert. The pasta turned out great. To melted butter, garlic, all purpose flour, milk, mushrooms, tomatoes, fried chicken pieces, provolone, parmesan and cooked pasta are added. It is then baked for 25 minutes at 400F. I got the sun-dried tomatoes from a colleague. It was very finely chopped and disappeared into pasta giving it a brown color.

Spinach Lasagna (Florentine Lasagna)

Spinach lasagna is one of my favorite lasagna. Instead of frozen spinach, I used freshly cooked spinach with some spices and it turned out super delicious.

Macaroni and Cheese with Tomato Sauce

In this healthier version of macaroni and cheese part of cheddar cheese is replaced with tomato sauce. My son loves this version better because he loves to have tomato sauce in his pasta.

Macaroni and Paneer (Indian Cheese) with Spinach


I was very curious and excited to try this macaroni dish where paneer (Indian cheese) is used instead of the usual cheddar cheese. This is a must try recipe for paneer lovers. Addition of spinach and parmesan cheese make the dish heavenly.

Macaroni and Cheese (Stove top version)


This time I tried the stove top version of Mac n Cheese. Previously I had posted the baked version. The stove top version is much more easier and I didn't find much difference between them except for the added taste of bubbly cheese and bread crumb topping of the baked version.

Beef Lasagna


I still remember the first time I went to an Italian restaurant. I totally hated pasta then. Years passed and now I crave for Italian food (American version of Italian food, to be precise). I heard authentic Italian food tastes different from those served in Italian restaurants in US. The other day I asked my husband to buy some beef to make curry and he brought home a pound of ground beef! My next thought process was, what should I make, beef cutlet or lasagna? Finally I gave in to my Italian craving. Apparently, my son also loved the lasagna, but he doesn't seem like a fan of ricotta cheese. I made some minor changes to the original recipe by adding some Indian spices to the beef.

Baked Macaroni and Cheese

I had some leftover cheddar cheese in the refrigerator and decided to make the classic macaroni  and cheese. This is the baked version of mac and cheese. It tasted really great. Next trial will be the stove-top version.
